Yep, you absolutely can change natures in Pokemon Scarlet and Violet! You'll need to get your hands on items called Mints. These Mints adjust your Pokémon's stats to reflect the nature you want. You don't change the nature per se, but the stats align as if you did, so it's pretty much the same deal. Gotta catch 'em all, right? And now, with Mints, you gotta catch 'em all... in the right nature!

No, you can't really change a Pokémon's nature. What you CAN do is use Mints, which mimic the effects of a nature change. So, while the original nature stays the same in your Pokémon's summary, the stats are adjusted as if it had a different nature. A bit of a workaround, but it gets the job done!
