Making it night in Pokemon Scarlet isn't something you can do inside the game because the game's day and night cycle matches the real-world clock of your Nintendo Switch. So, if you want it to be night in the game, you gotta play at night in real life. Or, you know, you could just adjust your Switch's system clock to trick the game. Just go to your system settings, change the time to night hours, and voila, night time in Pokemon Scarlet.
