Just play through the game, and you'll unlock climbing. No special tricks. Just the good ol' game progression.

Actually, climbing isn't a thing until much later. So, if you're stuck at a cliff thinking it's Skyrim and you can just jump your way up, think again. Keep playing, and you'll unlock the feature with Koraidon. Patience, young trainer!
