You can't directly change which Pokémon are in an outbreak in Pokémon Scarlet or Pokémon Violet. Outbreaks change daily on their own, so you gotta wait until the next day to see a new set of outbreak Pokémon. Think of it as a surprise gift from the game every day!

Actually, just advance your Nintendo Switch's system clock to change the outbreak Pokémon. Not saying you should, but it's a workaround if you're really hunting for a specific Pokémon outbreak.
