You can get infinite round time in CS:GO by using console commands. First, make sure you have the console enabled in the game settings. Once you're in a private match, hit the tilde key (~) to open the console, and type 'mp_roundtime_defuse 60' (for Defuse maps) or 'mp_roundtime_hostage 60' (for Hostage maps). These commands set the round time to 60 minutes, which is basically as close to infinite as you'll get. Remember, this only works in private servers where you have admin rights!
