Nope, can't do it. Subway Surfers doesn't let you enter a name directly into the game. Your high scores just go under your Google Play or Game Center name.

Actually, I tried changing my Google Play name to see if it updates in Subway Surfers. It worked! My high score now proudly displays my new name. Make sure your game is connected to your Google Play account, and any name change should reflect on the leaderboard.
