Actually, I found the epilogue started for me after I did a bit more exploring and caught some more unique Pokemon, even after finishing the main quests and beating the Elite Four. Might be worth roaming around a bit more if it doesn't trigger for you right away.

Just finish the main stories and beat the Elite Four. After that, the epilogue begins automatically. Simple as that. No need to overcomplicate things!
