Nope, you can't sell aircrafts or any other vehicles for that matter in GTA 5. The game doesn't have a system for selling vehicles back. Just collect 'em all!

Yeah, you can sell your aircraft in GTA Online, actually. But remember, you need a hangar to do it. I sold my old chopper last week. It's not as straightforward as selling cars at Los Santos Customs, but it's definitely possible.
