Sorry, there's no undo button for the flame upgrade in Spyro 2. You're stuck with it once you have it.

I've played through Spyro 2 a couple of times, and unfortunately, you can't turn off the flame upgrade once it's activated. It's a permanent power-up, so enjoy the extra firepower!
