Nope, doesn't work like that. Unbound Flourishing only doubles the X value in spells, not abilities. Monstrosity is an ability, not a spell. So, unfortunately, Unbound Flourishing and monstrosity abilities don't mix.
Tried it in a game last night, and yes, Unbound Flourishing does indeed copy the X in monstrosity abilities. It turned my game around completely. Watching your opponent's face when your creature becomes twice as monstrous is priceless!
