I've been playing GTA 5 with my buds who have PS4s while I'm on my PS5, and it works fine. The trick is to make sure everyone is on the same version of the game. So, yeah, it's definitely possible.
Nope, sorry, no crossplay between PS5 and PS4 for GTA 5. Each console is its own island.
Actually, GTA 5 doesn't support crossplay between PS5 and PS4. You've got to stick to your own console version, unfortunately.
