Once you've set your date of birth on PSN, it's locked in. Sony suggests creating a new account if you really need to change it.

Nope, changing your DOB on PSN isn't a thing. Remember your age next time!

I tried changing mine a while back. Support told me it's not possible and recommended starting fresh with a new account.
