Oh yeah, you can totally play as a cop in GTA 5 but in a not-so-official way. You gotta get creative! Use the Director Mode, where you can roleplay as a cop. There's no official 'cop missions', but you can definitely make your own fun by stopping crimes, chasing down bad guys, or just cruising around in a police car with the siren blaring. Imagination is your mission creator here!
