Sure, you can open multiple games at once, but just because you can, doesn't mean you should. It's a fast track to making your PC beg for mercy unless you've got a beast of a machine.

I've done it. Had a casual game running in the background while grinding levels in another. My PC didn't burst into flames, so yeah, it's doable. Just keep an eye on performance.
