Totally, but be prepared for a fight! Use a stasis rifle to freeze them and then go ham with your knife or a repulsion cannon.
FYI, killing stalkers is possible but not really worth the hassle. They drop teeth, but you can get those without the bloodshed.
I've done it! Freezing them with the stasis rifle first makes things way easier. Then just chop them up with your knife. Happy hunting!
