As someone who watched the show and read the manga, there are notable differences, especially in pacing and character development. Anime skipped or altered some arcs. Both are great, just different experiences!

The anime and manga are like siblings: similar but not identical. If you want the full, uncut Tokyo Ghoul, the manga's the way to go.
