Actually, sometimes it's not up to you. If your opponent has a creature with an ability like 'Menace', you can't block with just one creature, you gotta use two or more. So, yeah, you choose, but the game's rules and card abilities might limit your options.

Totally, you get to choose which of your creatures blocks an attacking creature in MTG. It's all about strategy. You look at the battlefield, see what your opponent is throwing at you, and decide if you want to block and with whom. Just remember, you can only block creatures that are attacking you or a planeswalker you control, and one blocker per attacker unless you've got a creature with the ability to block multiple attackers.
