Honestly, just start with Brotherhood. It's more faithful to the manga and, in my opinion, has a more cohesive story.
I watched Brotherhood first and had no issues following the plot. Both series are great in their own right, but they're different enough to stand alone.
You don't HAVE to watch it, but the original Fullmetal Alchemist offers its own unique story and character developments that Brotherhood doesn't cover. So, why miss out?
