Nah, you don't absolutely need online to enjoy Animal Crossing. Most of the game's fun comes from solo activities like fishing, catching bugs, and decorating your island. That being said, having an online connection does unlock some neat features like visiting friends' islands and accessing the game's updates and seasonal events.

You can totally play Animal Crossing without an internet connection, but you'll miss out on updates and visiting other islands. Still a blast alone, though!

Honestly, Animal Crossing is pretty much a complete experience offline. Online play adds a layer, sure, like trading items with friends or downloading custom designs, but it's not a must-have to enjoy the game.
