Yup, vehicles in MTG definitely have power and toughness. They're kinda like sleeping giants; they don't do much until a creature with at least enough power to match the vehicle's crew number hops in to 'wake' them up. So, until they're crewed, they're just fancy artifacts chilling on the battlefield.

They sure do, but remember, those stats only matter when the vehicle becomes a creature. Before it's crewed, it's basically a decorative paperweight on your battlefield.
