Nope, another attacker won't 'undo' Exalted per se. In Magic The Gathering, Exalted gives a bonus every time a single creature attacks alone. If you attack with more than one creature, the Exalted trigger doesn't happen, but it doesn't negate any existing Exalted bonuses already given. So, if you've already attacked with one creature alone, and it got the Exalted bonus, deciding to attack with another creature in the same turn won't take that bonus away. But, remember, you only get the Exalted bonus when exactly one creature attacks.

Actually, you can't 'undo' Exalted once it's triggered for that combat phase. If you attack alone with one creature, it gets the Exalted bonus - end of story. If you try to attack with another creature afterward, you're simply not going to trigger Exalted again. It's all about that one creature getting its moment to shine!
Sure, sending another creature into battle dilutes the Exalted strategy - you miss out on the bonuses. Exalted is all about the glory of the one!
