They did! MK: Armageddon had a customization mode. It was pretty cool but didn’t make a comeback in the newer releases.

Yeah, you could create your own character in MK: Armageddon. Haven't seen it since then, though.

Absolutely! Mortal Kombat Armageddon had a Kreate-A-Fighter mode, letting players customize their own warriors. That feature hasn't been in the latest games though.
