The anime is a solid adaptation, but the manga has more detailed art and scenes that didn't make it to the screen. Both are awesome in their own way!

Haikyu!! anime follows the manga pretty closely, with only minor differences and some filler episodes to add pacing. You won't miss out on much if you stick to the anime!

As someone who's read every chapter, I can say the anime stays very true to the manga. The key plot points and character arcs are almost identical.
