Trust me, I've done this a million times: quit the current job through the Career tab, then send your Sim to a new workplace to start their new career.

Tap on your Sim, go to the Career tab, and select 'Quit Job.' Then, you can assign them a new career by sending them to the desired workplace. Happy job hunting!
