To change your verification number for PSN, go to your Account Management settings on the PlayStation website. From there, navigate to Security and change your mobile number under 2-Step Verification.

Open the PlayStation app on your phone, go to Settings > Account Information > Security, and update your phone number for 2-Step Verification.
