Why not just use the 'Unfollow' option? That way, you won't see their posts, but you won't offend them by unfriending.
You can also do it from your friends list. Go to your profile, click on 'Friends,' find the person, and click 'Unfriend.' Easy-peasy!
I do this all the time when my friend list gets too crowded. Works like a charm!
