Hot take, but I think the best way to get coins is to focus on the main storyline and side quests. The loot will come naturally as you progress, and you won't have to go out of your way to grind for Galleons.

In my experience, selling excess gear you pick up along your adventures can rack up coins pretty quick. I also made a fair bit by mastering potion making and selling those. Hogwarts Legacy does a great job of rewarding exploration and crafting, so take advantage of that!
