You can mute the conversation if you don't want notifications. Just long press the chat, click on the speaker icon, and choose how long you wanna mute it.
TBH, you can't *really* hide WhatsApp chats beyond archiving. Hiding WhatsApp messages? Just archive the chat.

I usually just create a new group, add myself, and send the sensitive messages there. Works like a charm!
