You'll get an email from Valve as soon as they're ready to ship your Steam Deck. Make sure to check the email associated with your Steam account, and maybe keep an eye on that spam folder just in case. They usually update your order status on your Steam account too, so you can log in and check there.

I ordered mine last month and outta nowhere, BOOM, got an email saying it was on its way. So yeah, check your email. Valve won't leave you hanging.

Honestly, there's no magic way to know exactly when. Valve sends out emails and updates order statuses on Steam. Just hang tight!
