Just press and hold the power button on the console itself until you hear two beeps. Voila, it's off.

I had the same question when I got my PS5. Hold the PS button on the controller, scroll to the power icon in the Control Center, and select 'Turn Off PS5' or 'Enter Rest Mode'. There you go!
