Just go to Settings > Account Management > Account Information > PlayStation Subscriptions and turn off auto-renewal. Boom, you're unsubscribed!

Log in to your PSN account on the PlayStation website, head to Subscriptions Management, and cancel from there. Easy peasy!

PSA: Turning off auto-renewal stops future charges but doesn't refund current subscriptions. Take note!

From firsthand experience, navigate to Settings > Users and Accounts > Account > Payment and Subscriptions on your PS5. Select PlayStation Plus and turn off auto-renew. Worked like a charm for me!
