It's simple: stash = storage. You can't carry everything on you all the time (unless you've got some superhuman strength I don't know about). Dump the extra stuff in your stash box so you can pick it up later. Just watch the weight limit; even your stash has its limits.
Don't overthink it - your stash box is basically your in-game closet. If you've got too much stuff weighing you down, or you've picked up items you want to save for a rainy day, toss them in there. It's safe from other players, so no worries about theft. Just remember there's a cap on how much it can hold.
