Nests are just places where you find a whole bunch of the same Pokemon. They change every couple of weeks.

Think of nests as Pokemon parties! Certain spots in the game see increased spawns of specific Pokemon. These spots change roughly every two weeks, so check back often!

From my experience, nests are the best for catching a bunch of the same Pokemon quickly. They rotate bi-weekly, so the Pokemon change regularly.
