To assign crew to outposts in Starfield, simply open your character menu, navigate to the outposts section, and select 'Assign Crew.' Make sure your crew members are available and compatible with the tasks at hand!

Tried it myself, and all you gotta do is go to your outpost menu and assign the crew to their jobs from there. It's slick!
