I removed someone once by pressing their name, then selecting 'More' and 'Remove Friend'. Worked like a charm!

Deleting someone on Snapchat is easy, just open the app, go to your Friends list, find the person you want to remove, press and hold their name, then tap 'More' and 'Remove Friend'. Bye-bye!
