To deploy a parachute in GTA 5, you just need to press the 'X' button on PS3/PS4/PS5, the 'A' button on Xbox 360/Xbox One/Xbox Series X|S, or the 'Spacebar' on PC after you've jumped from a sufficient height. Just make sure you've got a parachute equipped first! You can usually find them at the top of tall buildings, purchased from Ammu-Nation, or automatically equipped when exiting an aircraft.

Guys, don't forget to actually have the parachute equipped. Saw too many jumping off thinking it auto-equips. Spoiler: It doesn't.
