Just keep crossbreeding! Each type of flower in Animal Crossing has a different recipe for blue variants. Like, for blue roses, it's a bit of a process—you need to breed red roses together to get special hybrid reds, then breed those for a chance at blue. For windflowers, it's simpler: white + white can result in blue. Experiment and have fun with it.
