It's easy! Just before you catch a Pokémon, slide the AR toggle to the off position on the top right of your screen.

You just need to tap the AR switch in the top right corner when you're encountering a Pokémon. Bye-bye AR!

Turn off AR mode by tapping the AR slider in the upper-right during a Pokémon encounter. Simple as that!
