In standard Fortnite modes like Battle Royale, you can have up to 100 players in a match. Lego Fortnite isn't an official mode now, but if it existed, it would probably follow similar rules!

If LEGO Fortnite existed, it's safe to assume it could host 100 players, just like the usual Fortnite Battle Royale mode.

If LEGO Fortnite were real, it'd likely support the same number of players as regular Fortnite Battle Royale, which is 100.
