To assign weapons to a group in Starfield, open your inventory, select the weapon you want, and choose 'Assign to Group.' Make sure you've unlocked the group feature first, though!

You can't organize weapons into groups yet鈥攎aybe in future updates or mods!
Just open the menu, go to inventory, and drag your weapon to the group slot. Done!
From my experience, use the quick-access menu by holding the assigned button, then you can easily switch weapons mid-battle.
