Honestly, just pick Dance as your major in college and stay involved in Dance-related activities. You'll get there eventually.
Start by joining the Dance team in high school, then study Dance in college. When you graduate, look for the Choreographer job!
I became a choreographer by joining the Dance club early and keeping my character's fitness and looks high. It worked for me!
Just keep re-rolling jobs until it pops up. Takes some patience, but hey, that's BitLife for ya!
