Honestly, just keep playing. You'll get the hang of each minigame's quirks and which plants work best. Some of it's trial and error, but that's part of the fun! I used to struggle with 'Last Stand' until I figured out a killer setup with Gloom-shrooms and Garlics to direct traffic.
