Just dodge Spewart's poison attacks, hit him with Cappy, and then stomp on his head. Easy peasy, lemon squeezy!
Honestly, just use Cappy to clean up the poison and jump on him when he's vulnerable. It's not that hard.
From personal experience, when Spewart starts spreading poison everywhere, I found it helpful to stay calm and use Cappy to clear the floor before going for the jump attack. Worked for me every time!
