Don't bother with fancy strategy, just hit and run. Cast a few spells, dodge, then go back in. Rinse and repeat. Trolls aren't too smart, so as long as you don't get greedy with your attacks, you'll be fine.
Easiest way to take down that first troll is by focusing on dodging its attacks first. Trolls in Hogwarts Legacy swing big, but they're also slow. Once it misses a swing, use that opening to cast spells. Explosive and stunning spells work wonders. Keep moving, keep dodging, and strike when you have a clear shot. Also, don't forget to use the environment to your advantage whenever possible!
