You gotta ground pound on its head! When the squid (called Mollusque-Lanceur) pauses after shooting out those ink missiles, use Cappy to climb up and give it a nice stomp. Rinse and repeat!

From my experience, the key to beating the squid in Super Mario Odyssey is timing. You need to dodge the ink missiles and wait until the squid stops attacking. Then quickly climb up using Cappy and ground pound his head. Don't let him catch you off guard. Good luck!
