You need to be male and have a good amount of smarts and health. Check the 'Occupations' tab and select the monk career option once it appears.
In my experience, I had to spend a few years maintaining high happiness and health before seeing the monk option in the occupations. So, keep your virtual life in order, and it should appear eventually.
Just be kind and keep your character's karma up! Then, you’ll see ‘Monk’ as a career option in the jobs section.
