Actually, you don't 'build' a vivarium in the traditional sense. You unlock the ability to conjure them through the Room of Requirement. Make sure you've progressed enough in the story to access this feature. After that, it's just a matter of choosing the right environment for your creatures. Easy peasy lemon squeezy!
