Just call Sony's customer service. It's quicker than fiddling with menus sometimes.

To cancel your PlayStation Plus subscription, simply go to Settings > Account Management > Account Information > PlayStation Subscriptions, then select your subscription and choose 'Turn Off Auto-Renew.' Easy peasy!

I recently canceled mine! You can also go to the PlayStation Store, find Subscriptions in the menu, and turn off the auto-renew option.
