You can use V-Trigger cancels to interrupt your moves. Just hit HP+HK during a move to activate your character's V-Trigger and break the sequence.

In Street Fighter V, you can cancel moves by performing another move immediately during the animation of the first. For example, try doing a special move right after a normal attack. Combo city, here you come!
