Just delete your account from Twitch settings if you're done streaming – simple as that.
Once in settings, just look under 'Disabling Your Twitch Account' and you'll find what you need to cancel everything.
If you mean canceling your subscription, go to your subscriptions page, find the sub you want to cancel, and hit 'Don't Renew.' Easy peasy!
